I also noticed you have LOA from Michael Losier. He's one of my new favorite authors. I've listened to a coupld of audios wth him and have the book. He does an awesome job of making the principles clear and easy to use. Like he says, he's the "how to" guy,

I think there must be something to knowing that the cookbooks are there if you need them. You know, when the VIP's, celebrities, and Great Aunt Gertie come to dinner, you have a secret weapon! Joy of Cooking! Best of Gourmet! Secrets of Braising! ...and then end up taking them out because it's just easier... ;)
