Extra Credit by Andrew Clements might be a good start. It's been awhile since I read it though. I think the family is from Afghanistan.
I read the book Persepolis by Marjane Satropi. It is a graphic novel based on a true story of a girl in Iran. It was a very good read and unlike other graphic novels in that there is a story to read along with the graphic art. It might be a bet mature for 7th grade, though. I would suggest you preview it.
The Day of the Pelican by Katherine Paterson has Muslim kids who immigrated to America shortly before 9-11. 9-11 happens near the end of the story and is particularly poignant considering all they had been through in order to get to America.
