I like Emeril. I really do. But I said to Gert several years ago that while his shtick is good, his food is not really based in a normal kitchen. This is not the first cookbook of his I have read. The story of Delmonico is interesting.

I was hopeful to find some good steak recipes to try on the kettle. Unfortunately, the number of ingredients and procedures was more than I wanted to delve into. I am certain if one has all these ingredients on hand regularly, one could produce these dishes with ease. For the rest of us, this is just a pretty cookbook.
