The terrific thing about this book is that aside from amazing recipes, Alton Brown not only tells HOW to make the food, but WHY you need to add sugar or eggs or whatever to the recipe. To be honest this is only part cookbook, the other part is more of a culinary science book

    Alton Brown is incredible. His books are to cooking like a music Theory class is to songwriting and composing. Filled with wit and humor but also packed to the gills with invaluable guidelines for your baking. Grab a notebook and be prepared to read it cover to cover.

    Baking. More an exact science then cooking. Frankly, it scare the crap out of most of us. Leave it to good ole A.B. to demystify some of the common fears and misgivings about baking. I've found this book to be invaluable to my nascent baking skills

    If you like the tv show, you will enjoy the book. It's like you are reading a transcript from the show. Most excellent!

    Yes, baking is science, and Alton will tell you why. He will also tell you how to get the chocolate chip cookie of your dreams.
