My favorite is probably "A Fratricide", it's really short, and every word seems carefully chosen for maximum effect. (I'd love to see what the Coen Bros. could do with this one!) Misconception, absurdity, agitation, paranoia, prejudice, impulsiveness, and many flavors of wrongheadedness being existentially played out are illustrated in Kafka's tales. These themes are repeatedly explored with many characters and many situations so that the reader can develop a sense of what makes Kafka's approach to these ideas unusual and often brilliant. 'A Fratricide' is IMO a perfect 2 page example of Kafka's power to evoke a psychologically intense conflict between the narrator and what he perceives as his oppressor that captures the essence of what is or can be 'Kafkaesque'.
