    Well, I can't say that I've read it cover-to-cover, though I've flipped through a mighty good portion of it. It's comprehensive, and has lots of helpful advice for beginners (how to trim artichokes, or why to pre-bake pie crusts). There are many variations-on-a-theme, which makes it easy to rapidly diversify your cooking abilities. All good. The one thing it lacks is sexiness. This is a fairly boring book to read all on its own. But it's got it where it counts.

    I bought How to Cook Everything Vegetarian earlier this summer after joinign a Community Supported Agriculture (CSA) share in a local farm and being inundated with vegetables, some of which I'd never eaten. I mean, fennel? What does one do with that? Well, Bittman to the rescue. Now I know what it is, how to prepare it for cooking and eating, and have recipes to use it in.

    Bittman does this with each fruit and veggie, and his instructions and suggestions (and the illustrations of how to prepare) are exceptionally clear. He also includes some great charts such as "Breading and Frying Vegetables," "Everyday Spices," "Hot Sanwhiches" "and "Everyday Legumes," which I have found to be very useful.

    My favorite part of the whole book though is that Bittman includes lots of great variations for many of his recipes, and/or lists such as "Rubs and Sauces for grilled Tofu" in the section about tofu, and lists the corresponding page number so they are easy to find. Just reading about the many ways in which recipes can be changed up a bit has broadened my expectaions of everyday veggies.

    A wonderful, wonderful book. Highly recommended.

    One of the best cookbooks I have ever come across and one I will certainly be purchasing! Very complete in covering all areas of cooking from fruits and veggies to the dreaded beans as well as breads and pastas. A must have!
