Beautiful and exciting vegetarian recipes inspired by cultures around the world. That global flair is both a strength and weakness for the cookbook as a whole. Several of the Middle Eastern and East Asian recipes complement the more usually found Mediterranean vegetarian dishes, but there are ridiculously exotic ingredients that only sometimes have a more common substitution listed. For example: galangal can be replaced with fresh ginger, cassava chips can be replaced with "something crunchy like deep-fried croutons", but I'm apparently on my own finding things like smoked scamorza, dried Persian limes, pomegranate molasses, or tamari. Even some of the items I recognize I couldn't afford or find within a reasonable distance, like saffron threads or tahini paste.

Most recipes can be made fully or by dropping a spice or two, although all are weekend or special occasion dishes. There is a lot of preparation and/or cooking time for nearly every recipe. The instructions are quite straightforward. The thickness of vegetable slices, the temperatures, cooking times and utensils to be used are all clearly and specifically explained. The couple of recipes I've tried have worked well. A bunch more will have to wait for summer and fall harvests, unfortunately. The book is a bit of a tease in winter.

As a cookbook, the photos are pure food porn. I love them. For special occasions I might even try to recreate them, but for a practical dinner situation during the week night -- the recipes will not fly. In addition, the few I did make didn't knock the socks off of me. They are beautifully presented though. I'll keep working on them, but every recipe has a mountain of ingredients and prep work.

Great photographs, and everything looks delicious. I have yet to make anything from this cookbook.

Just fantastic! I've been a fan of his vegetable recipes for several years and it's a delight to have some of his best collected together.
